I’ve got your smitten kitchen cookbook and have shared your two-ingredient brittle recipe with the staff at our local branch Public Library in Orlando Florida. We attend their Mahjong Club regularly, and I wanted to share with them your recipe, it’s addictive and healthy too. I keep a batch in a treasured “Mr. Peanut” themed glass jar with Mr. Peanut’s likeness in the glass too. At home I’ve added lightly toasted salted edamame pieces, and other times I’ve added organic raisins, chopped pieces of figs, dates, etc. I also regularly make your polenta-baked eggs with corn, tomato, and fontina. It’s a comforting evening meal after a very long day and I make double the recipe so there’s enough for a second day. The chicken and rice, street cart style is also a regular. Thank you, thank you, thank you.
